Roasted Salmon with Relish

Roasted salmon with relish


Ingredients

  • ¼ cup walnuts
  • Pinch cayenne pepper
  • 1½ teaspoons lemon juice
  • ½ teaspoon natural honey or liquid sweetener
  • 1 to 2 tablespoons roasted red pepper, diced
  • 1½ teaspoons + 1 tablespoon extra-virgin olive oil
  • 2 tablespoons fresh parsley, chopped - unfortunately, I was out of this, so I used 2 teaspoons dried parsley instead
  • Kosher salt and freshly ground pepper
  • 1 tablespoon fresh chives, chopped
  • ½ teaspoon grated lemon zest
  • Fresh salmon filet, about ¾ lb. 

Directions 

Relish: Preheat oven to 350°F. Spread walnuts on baking sheet and bake until toasted, 7 to 10 minutes; remove and let cool. After walnuts have cooled, finely chop, and mix with cayenne, lemon juice, honey, roasted red pepper, and 1½ teaspoons of olive oil. Set aside and allow flavors to blend while preparing salmon.

Combine remaining 1 tablespoon olive oil with parsley, salt and pepper to taste, chives, and lemon zest. Rub the herb mixture over salmon. Bake in oven preheated to 425°F until done—12 to 14 minutes. Serve with relish.
