Roasted salmon with relish |
Ingredients
- ¼ cup walnuts
- Pinch cayenne pepper
- 1½ teaspoons lemon juice
- ½ teaspoon natural honey or liquid sweetener
- 1 to 2 tablespoons roasted red pepper, diced
- 1½ teaspoons + 1 tablespoon extra-virgin olive oil
- 2 tablespoons fresh parsley, chopped - unfortunately, I was out of this, so I used 2 teaspoons dried parsley instead
- Kosher salt and freshly ground pepper
- 1 tablespoon fresh chives, chopped
- ½ teaspoon grated lemon zest
- Fresh salmon filet, about ¾ lb.
Directions
Relish: Preheat oven to 350°F. Spread walnuts on baking sheet and bake until toasted, 7 to 10 minutes; remove and let cool. After walnuts have cooled, finely chop, and mix with cayenne, lemon juice, honey, roasted red pepper, and 1½ teaspoons of olive oil. Set aside and allow flavors to blend while preparing salmon.
Combine remaining 1 tablespoon olive oil with parsley, salt and pepper to taste, chives, and lemon zest. Rub the herb mixture over salmon. Bake in oven preheated to 425°F until done—12 to 14 minutes. Serve with relish.
