Vietnamese Meatballs with Ground Turkey

 Here is another delicious recipe I have had for awhile, and finally tried ~ 


Vietnamese Meatballs on whole-grain orzo


Ingredients

  • ¾ to 1 lb. ground turkey - I used plain ground turkey, although you can sub in a bit of ground turkey sausage, if desired
  • 1½ teaspoon lime or lemon zest
  • 3 teaspoons fresh ginger, grated
  • 1 garlic clove, minced
  • 2 tablespoons red onion, minced
  • few sprigs fresh cilantro
  • ½ jalapeno, diced
  • 1½ teaspoons fish sauce or Worcestershire
  • 1 tablespoon olive or sesame oil
  • cabbage, finely shredded
  • radishes, thinly sliced
Sauce:

      • 3 garlic cloves
      • jalapeno
      • ¼ cup lime juice
      • 2 tablespoons stevia
      • ¾ cup water
      • ½ teaspoon Worcestershire
      • 2 tablespoons whole-grain flour
      • 2 tablespoons cold water

      Directions

      Combine ground meat, zest, ginger, garlic, onion, cilantro, jalapeno, and sauce. Form into meatballs.
      Heat oil in large skillet over medium heat. Add meatballs and cook until done—12 to 15 minutes. Stir in cabbage and radishes. Turn heat off, and cover to keep warm.

      To make sauce, pulse ingredients in blender until smooth. Pour into small pan, and boil on stove 3 minutes. Stir flour and water together to make a paste. Stir into sauce, and boil 1 minute more. Add to meatballs, and serve with pasta or rice.
