Sun-Dried Tomato Salmon Cooked in Air Fryer

We recently had salmon cooked in my new air fryer, and it was amazing! You can easily convert just about any salmon recipe to this cooking method. I am sharing the recipe I used.


Moist and delicious salmon cooked in air fryer


Ingredients

  • about 1 lb. salmon
  • 1 cup fresh parsley, finely chopped
  • ½ cup sun-dried tomato vinaigrette*
  • ¼ cup sun-dried tomatoes, chopped
  • 2 garlic cloves, minced

Directions

Combine parsley, vinaigrette*, tomatoes, and garlic. Place in fridge for at least 1 hour, and up to 24 hours, to blend flavors.


*To easily make your own vinaigrette, pulse the following in a blender: ¼ cup sun-dried tomatoes, ¼ cup oil from sun-dried tomatoes, and 1 tablespoon balsamic vinegar.


Pat salmon dry and season lightly with salt and pepper. Spritz lightly with olive oil. Preheat air fryer to 390°F on the roast setting. Place salmon in fryer skin side down. Cook until done, about 7 to 8 minutes. Top salmon with sauce abut half way through cook time. 


Since the sauce I used is a basting sauce, I had put some of it on the salmon at the start of the cook time. The air fryer made it a bit too crisp for our liking (if you enlarge the photo, you can see the crispy and less crisp topping difference). Therefore, I suggest adding it during the cook time, instead of at the start--unless you want your sauce super crispy!
