Jalapeno Chicken Casserole

Sharing a recipe I got from a friend for those who asked for it. We did a Christmas card exchange this year, and included recipes with the cards. This is a recipe I received (only slightly modified). I did not set out to post this recipe, so I only have the one photo to share.




Ingredients for 2

  • ¾ to 1 lb. boneless, skinless, chicken breast
  • 1 garlic clove, or ¼ teaspoon garlic powder
  • 4 oz. low fat cream cheese
  • 2 to 3 fresh jalapeƱos, sliced
  • 2 oz. low fat sharp cheddar
  • 1 to 2 turkey bacon slices, cooked almost crisp and diced
  • ½ tomato, chopped (optional)

 

Directions

Spray baking or casserole dish with cooking spray. Lay chicken breasts in casserole dish, whole or chunked. Season with garlic powder, then carefully top with cream cheese chunks. Top with jalapeƱo slices, then top with cheddar.

Bake uncovered at 375° until chicken is done—25 to 35 minutes. Add bacon, and tomato, if using, last 5 minutes of cook time. 

Super easy and delicious!
