Ginger Salmon

 Love the slightly tangy flavors in this recipe!


Ingredients

  • ¾ lb. skinless salmon
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon low sugar orange juice
  • ½ tablespoon fresh ginger, grated
  • ½ tablespoon sesame seeds
  • 1 cuke, thinly sliced - I subbed celery, which was also delicious
  • ½ jalapeno, thinly sliced and halved
  • 1 tablespoon fresh lemon juice
  • ½ tablespoon extra-virgin olive oil
  • dash kosher salt
  • ½ tablespoon fresh dill, chopped - I subbed ½ teaspoon dried dill

 


Directions

In a marinade bowl, combine soy sauce, honey, orange juice, and ginger. Reserve 1 to 2 tablespoons of mixture and set aside. Place salmon in sauce and marinate in fridge at least 15 minutes, flipping occasionally.


Meanwhile, toast sesame seeds in skillet on stove for 2 to 3 minutes. Let cool. In a small bowl, combine cuke, jalapeno, lemon juice, oil, and salt. Stir in dill and seeds. Serve over salmon.


To cook salmon, grill or broil until done, about 12 minutes, brushing with reserved marinade.
