Moroccan Spiced Chicken

Love this recipe, and it is so easy!


Ingredients for 2

  • 1 garlic clove chopped
  • ½ teaspoon cumin
  • ¼  - ½ teaspoon coriander
  • ¼ teaspoon paprika
  • Dash cinnamon, cayenne pepper, and freshly ground black pepper
  • ¼ teaspoon kosher salt
  • 1 teaspoon extra-virgin olive oil
  • 1 lb. boneless and skinless chicken breast
  • 2 cups fresh arugula
  • 2 tablespoons almonds, chopped and roasted
  • ½ lemon, cut into wedges

 

Directions

Heat oven to 425°. 

In a small bowl, combine seasonings and oil. Rub chicken with spice mixture. Roast until cooked through—20 to 30 minutes. 


Arrange arugula on serving plates. Sprinkle with additional oil. Top with chicken and almonds. Serve with lemon wedges.
