Sweet and Sour Ham

Rather than go without, I choose low fat and no sugar added ingredients to make this favorite dish healthier. Serve it over brown rice, which is a far better choice than white long grain rice.

Ingredients - 4 servings

  • 15½ oz. can unsweetened pineapple chunks or tidbits
  • 1 medium onion, sliced
  • 1 to 2 tablespoons extra-virgin olive oil
  • 1 lb. lean ham or canadian bacon, cut into strips
  • ½ - 1 cup green [bell] pepper, chopped - I used orange bell pepper, since that is what I had in the kitchen! 😁
  • ¼ teaspoon ground pepper
  • 1 tablespoon whole grain flour
  • 2 tablespoons cold water

Directions

Drain pineapple; reserve juice. Add enough water to measure 1 cup.

Delicious!

Cook and stir onion in oil in skillet over medium heat until tender, about 5 minutes. Stir in ham, green pepper, ground pepper, pineapple chunks, and juice. Heat to boiling; reduce heat. Cover and simmer until green pepper is crisp-tender, about 5 minutes.

Mix flour and cold water together; gradually stir into ham mixture to thicken. Boil and stir 1 minute. Serve over rice.

Enjoy ~ Let me know if you have any questions!
