Shrimp and Celery Salad

Love the curry flavor in this delicious salad!

I used large shrimp, and cut each one into thirds

Ingredients

  • ½ cup nonfat greek yogurt
  • ¼ cup low fat mayo  - I use olive oil or avocado mayo
  • 2 tablespoons lime juice
  • 1 tablespoon grated lime zest
  • 1½ teaspoons ground curry powder
  • ¼ teaspoon salt
  • 1½ lbs. cooked shrimp - chop into bite-size pieces, if using large shrimp
  • 4 celery stalks, sliced thin
  • 1 cucumber, peeled and thinly sliced 


Directions

In a large bowl, whisk together yogurt, mayo, lime juice, lime zest, curry powder, and salt. Add shrimp, celery, and cucumber. Toss to coat. 

Shrimp salad with all ingredients mixed in

Serve immediately, or place in fridge until ready to serve. I do not suggest making this more than a half day ahead of time, as the moisture in the ingredients will cause the cream dressing to become thin and watery.
