Garlic and Herb White Bean Dip (similar to Hummus)

Delicious with fresh veggies, crackers, and pita bread! This dip is super easy, and it freezes well.

Ingredients

  • 1 clove garlic, peeled
  • ½ cup packed fresh herbs, such as basil, thyme, oregano, chives, or rosemary - I used rosemary for this batch
  • 30 oz. cannellini beans, rinsed and drained
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons white wine vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

colors because the spoon was closer to the flash.

Directions

In food processor, finely chop garlic and herbs. Add remaining ingredients, and process until smooth. Adjust seasonings, if necessary. I added a bit more salt and pepper. Depending on the herbs you use, you may not need more.
