BLT Salad

For those of us who occasionally like to have a sandwich that is not really a sandwich! Here is a delicious BLT salad idea with two different dressing options.

Salad ingredients for 4 servings

  • 10 oz. mixed greens or baby spinach - use whatever you have on hand--I used romaine lettuce, this time
  • ½ cup shredded low fat Swiss cheese
  • 1 cup cherry tomato halves
  • ½ cup thinly sliced red onion rings
  • 4 slices cooked turkey bacon, cut into ½” pieces
  • ⅓ cup toasted rye or pumpernickel bread cubes - or, try with sunflower seeds instead!
  • Optional: thinly sliced avocado and/or hard boiled eggs

Salad with Dressing #1

Dressing ingredients

#1 - this is my preferred option, although the second dressing is yummy, too
  • ½ cup low fat mayo
  • 2 tablespoons red wine vinegar
  • ¼ cup chopped fresh basil - I subbed 2 tablespoons dried basil, although fresh basil is much better

#2

  • ¼ cup extra-virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice

Directions

Toss greens with cheese, tomatoes, and onions. Spoon onto 4 plates; sprinkle with bacon, bread cubes, and optional toppings.

To prepare dressing, choose one, and combine all ingredients in a glass jar; shake vigorously. Serve dressing with salad.
