For those of us who occasionally like to have a sandwich that is not really a sandwich! Here is a delicious BLT salad idea with two different dressing options.
Salad ingredients for 4 servings
- 10 oz. mixed greens or baby spinach - use whatever you have on hand--I used romaine lettuce, this time
- ½ cup shredded low fat Swiss cheese
- 1 cup cherry tomato halves
- ½ cup thinly sliced red onion rings
- 4 slices cooked turkey bacon, cut into ½” pieces
- ⅓ cup toasted rye or pumpernickel bread cubes - or, try with sunflower seeds instead!
- Optional: thinly sliced avocado and/or hard boiled eggs

Dressing ingredients
#1 - this is my preferred option, although the second dressing is yummy, too
- ½ cup low fat mayo
- 2 tablespoons red wine vinegar
- ¼ cup chopped fresh basil - I subbed 2 tablespoons dried basil, although fresh basil is much better

- ¼ cup extra-virgin olive oil
- 3 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
Directions
Toss greens with cheese, tomatoes, and onions. Spoon onto 4 plates; sprinkle with bacon, bread cubes, and optional toppings.
To prepare dressing, choose one, and combine all ingredients in a glass jar; shake vigorously. Serve dressing with salad.
