Pasta with Arugula and Basil

I think arugula is good in just about any kind of salad. Here is another ingredient combination that I love.


Ingredients

  • 1½ cups dry whole-grain pasta
  • ⅓ cup extra-virgin olive oil
  • 1 garlic clove, minced 
  • 1 teaspoon salt
  • 1 tablespoon balsamic vinegar
  • 16 fresh basil leaves, crumbled
  • 2 medium tomatoes, diced
  • 5 oz. arugula
  • 3 oz. shaved asiago cheese



Directions

Cook pasta according to package directions. Drain, and place in salad bowl.

Stir in olive oil, garlic, salt, balsamic vinegar, and basil until combined. Add tomatoes, arugula, and asiago cheese; toss gently.

Serve at room temperature with freshly ground black pepper, if desired.
