My Choice Healthier Banana Bread

A bit less added sweetener, no butter or shortening, and whole-grain flour make this delicious bread easier to swallow! 😉


Ingredients – 1 loaf 


  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • scant ½ cup stevia
  • ¾ cup ripe mashed bananas
  • 6 oz. nonfat plain Greek yogurt
  • ⅓ cup olive oil
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs
  • ½ cup coarsely chopped walnuts

Top with a smidge of butter, if desired, although
the bread is delicious and moist without added butter.

In large bowl, beat all ingredients except walnuts with electric mixer on low speed for 30 seconds. Beat on medium speed an additional 45 seconds, scraping sides down. Stir in nuts. Pour batter into pan sprayed with non-stick spray.

Consistency in pan before baking

Bake in preheated 350° oven until toothpick inserted in center comes out clean—45 to 55 minutes. I baked this loaf in my stoneware pan for 53 minutes. Remove from pan. Cool completely, about 1 hour.
