Chicken or Turkey Salad

An excellent idea for leftover turkey meat. Delicious with fresh cooked chicken breast, as well!




Ingredients


  • ¼ cup low fat olive or avocado mayo
  • 2 tablespoons nonfat greek yogurt
  • 1 small green onion, sliced
  • 1 or 2 celery stalks, thinly sliced
  • ¾ cup halved grapes or raisins - I used red grapes 
  • 1 lb. chicken or turkey breast, cooked and cubed
  • 2 tablespoons walnuts, chopped
  • kosher salt and freshly ground pepper to taste

Directions


Combine all ingredients until well blended; cover and chill. Serve with crackers, as a sandwich filling, on fresh lettuce, or on fresh spinach tossed with oil and vinegar.
