With fresh basil and tomatoes!
Ingredients for 4 servings
- 1 cup diced fresh tomatoes
- 3 tablespoons olive oil, divided
- 2 garlic cloves, minced
- ¼ cup torn fresh basil
- Kosher salt and freshly ground black pepper
- ½ lb. whole-grain angel hair pasta
- ¾ - 1 lb. boneless skinless chicken breast
- 2 teaspoons Italian or poultry seasoning - I have a homemade poultry seasoning mix I use. If you are interested in that recipe, just let me know!
- 2 tablespoons grated Parmesan
Directions
In a large bowl, stir together tomatoes, 2 tablespoons olive oil, garlic, basil, and season generously with salt and pepper. Let sit at least 20 minutes.
In a large skillet over medium-high heat, heat remaining tablespoon olive oil. Add chicken and season with Italian seasoning. Cook until no longer pink, about 10 minutes per side. Let rest 5 minutes, then thinly slice (or, shred, if preferred).
Meanwhile, cook angel hair until al dente, about 4 minutes. Drain and return to pot.
Add tomato mixture and sliced chicken to angel hair and toss until combined. Top with Parmesan and a drizzle of olive oil and serve.
