Moist and delicious!
½ cup olive oil
2 eggs
¼ cup maple syrup
1 tablespoon water
¼ cup brown sugar blend
1 cup whole-wheat flour
½ cup all purpose flour
½ teaspoon salt
1 teaspoon baking soda
Ingredients

Directions
Preheat the oven to 350°F. Lightly spray a 9x5x3 inch loaf pan with cooking spray.
Beat together the mashed sweet potato, olive oil, eggs, maple syrup, and water. Add in the sugar and then the flour mixture. Beat just until combined.

Mixture will be very thick. Scrape into the prepared baking pan, and place in preheated oven. Bake until a cake tester comes out of the center clean—55 to 60 minutes. Remove from pan and cool on wire rack.
Serve with butter if desired.
