Grapes and Nonfat Greek Yogurt - as GOOD as pie!

This dessert is super easy and delicious!

Ingredients


  • Black or red seedless grapes - I used less than 1 cup of red grapes for 2 people
  • Extra-virgin olive oil - I used about 2 teaspoons
  • Freshly ground salt and black pepper
  • ¾ - 1 cup red wine
  • Spice suggestions: ground nutmeg, cinnamon, and/or cloves - I used a couple of sprinkles of each
  • Nonfat Greek yogurt

Grapes ready for the oven


Directions

Preheat oven to 425°F. 

Place a small amount of olive oil in a bowl deep enough to hold the grapes. Add grapes and shake the bowl lightly to coat the grapes. Add a few grinds of salt and pepper. Gently shake the bowl again to coat the grapes.

Place grapes in a single layer on a baking sheet and place baking sheet in preheated oven. Cook until blistery and caramelized—about 30 minutes.

Meanwhile, heat red wine on stove and simmer until reduced to about ¼ cup. Remove from heat and stir in spices. Gently stir in grapes, and serve over yogurt.
